Tomato and Mascarpone Sauce Recipe for Pasta.  This is a really quick and easy recipe to make a lovely, creamy sauce for pasta.   I think it works really well with penne or fusilli pasta but it would work with spaghetti too.

You can change it up a little if you like, add tuna and sweetcorn, or some chopped ham to the finished dish.  

Ingredients for Tomato and Mascarpone Sauce Recipe

2 Tablespoons Olive Oil
2 Cloves of Garlic
400g Tin of Chopped Tomatoes
250g Mascarpone Cheese
Fresh Herbs like Basil or Parsley

How to Make Tomato and Mascarpone Sauce Recipe

  • Heat up your olive oil in a non-stick pan.

  • Crush the garlic and fry in the oil for around 40 seconds.
  • Add a tin of chopped tomatoes.

  • Cook the tomatoes and garlic until it begins to bubble.

  • Add the Mascarpone cheese and the chopped herbs.

  • Stir through until hot again.
  • Serve with pasta.

Feel free to add more herbs than you can see me adding here – I was making this for my daughter who does not like it ‘too herby’. If you don’t have fresh herbs, then you could also add dried. Any Italian herbs like basil or oregano work well.

This recipe makes a great pizza base sauce too.
